I love those little baby bananas – no, I don’t think that’s what their real name is, but I love them nonetheless. I bought some recently and apparently promptly forgot about them. I needed to do something with them. Stat. So of course, I turned to the best thing on the interwebs – Pinterest.
I pinned this pin a week or so ago. The recipe comes from Artsy-Fartsy Mama and it is amazeballs! Here are the ingredients:

The original recipe called for 3 or 4 overly ripe bananas, those of the regular size variety. Remember, I had the baby kind so I used 8 of them. The first thing you need to do is mash the bananas. I put them in the bowl of my KitchenAid and beat them to a pulp. Then I added the rest of the ingredients – two eggs & a box of yellow cake mix. How easy is that, I ask? The only thing I did do differently was add a splash of butter flavoring, which I always do when I bake anything. If you’ve never used it, start doing this immediately. You won’t regret it.
The recipe says it makes two small or one large loaf. Since I was making them to take to work, I put liners in a muffin tin and made muffins. I baked them for 18 minutes at 350 degrees. This was the result:
I had to make sure they tasted good enough to take to work. So I tried one.
It was scrumptious.

I've done this same recipe with pumpkin and applesauce and both are delish!
