Has it really been a week since I've been here to visit with y'all? Well, life has been kind of crazy but it shouldn't keep me from blogging. Unless you're having issues with not being able to find anything to write about. That whole HFCS really got to me. Not only was I madder than a wet hornet, but my feelings were a little wounded. Y'all are wonderful though - your comments made me laugh and smile. Thank you each and everyone of you who commented.
I decided to share another recipe with you. This is the easiest candy recipe you will ever make. Ever. I promise. (Even if there isn't one drop of corn syrup in it.) Plus, did you notice the name of the recipe? Sister Emily - uh, I'm pretty sure there's some rule about nuns not lying. Actually Sr. Emily would probably remind me that there's some rule about EVERYONE not lying. Touche'.
I wish I had a picture to share with you of these delicious candies. Unfortunately they usually don't last long enough. Ok, on with the recipe...
Sister Emily Bordages Wonderful Pralines
1 pound light brown sugar 1 cup pecan halves
1 cup whipping cream 1 tablespoon butter
Combine the brown sugar and cream in a microwave safe bowl (microwave? yes microwave!). Cover with a paper towel and microwave on High for 13 minutes. Add the pecans and butter. Stir for about 5 minutes. When the mixture begins to thicken, drop by spoonfuls onto waxed papers. Let stand until firm. Makes about 25 pieces.
Seriously. That's all there is to it. I make batches and batches and batches of these each Christmas. The only drawback is you CAN NOT double this recipe. It will not work. Trust me when I tell you this. I have tried it. Since I'm allergic to pecans, I've used walnuts and cashews at times so I can enjoy them as well. Unsalted cashews make for some quite scrumptious pralines, let me tell you. Another thing - weather does not seem to affect the recipe so no need to wait for a clear, dry day like with other candies.
This recipe is from the Beaumont Junior League Dining Without Reservations cookbook. Did y'all ever know I was in the JL? I know - shocking, huh?
Oh, I almost forgot. The nuts called for in the recipe? They are 'puh-cahns' NOT pee-cans. A pee-can is what your grandma kept under the bed.
Give these pralines a try when you get a chance. I swear on Katiebug's cowlick you will not be sorry.

Thank you for the pee-can thing. That is one of my pet peeves. It ranks right up there with people calling coke soda or pop or soda pop.

This sounds right up there with the marshmallow fudge. And nice to know it's good with cashews as honey is allergic to pecans, as well.

This sounds like a candy even I can make. I can make some mean chicken and dumplings, but candy and cake and baking is totally beyond me. It's a good thing I don't like sweets.

Pee-cans lol! That cracks me up every time I hear it!! When I say it (here in NC) I say it just like you and people look at me like I'm speaking some strange language they've never heard!!
